Fruit & Nut Bars


(Makes about 9 bars; good backpacking snack or lunch)

Ingredients:

2 cups Nuts
1 cup Dates, Pitted Prunes, Raisins or Dried Apricots
2 Eggs, Beaten
1/3 cup Honey

Directions:

  1. Grind nuts and fruit.
  2. Blend with eggs and honey.
  3. Place in an oiled 9x9 inch pan.
  4. Bake until firm -- about 20 minutes.
  5. Cool.
  6. When cool, cut into 3 inch squares.
  7. Wrap each bar in plastic wrap and store in a self-sealing plastic bag.
