Torta Terramoto (Earthquake Cake)
(Serves 4)
Ingredients:
12 oz. Semisweet Chocolate 1/2 cup (1 stick) Unsalted Butter 4 Eggs 1 1/4 cups Confectioners Sugar 1/4 cup Potato Starch
Directions:
Melt the chocolate and butter together in the top of a double boiler.
Remove from heat and set aside to cool.
Beat eggs with sugar until a heavy ribbon forms when you lift the beaters.
Lighten the chocolate mixture with a small amount of the egg mixture, and then fold the chocolate into the egg mixture,
blending well.
Fold in the potato starch.
Pour into a buttered and floured 8-inch cake pan.
Bake in a 350 degree oven for about 30 minutes.
Cool in the pan before turning out onto a serving plate.
