Torta Terramoto
(Earthquake Cake)


(Serves 4)

Ingredients:

12 oz. Semisweet Chocolate
1/2 cup (1 stick) Unsalted Butter
4 Eggs
1 1/4 cups Confectioners Sugar
1/4 cup Potato Starch

Directions:

  1. Melt the chocolate and butter together in the top of a double boiler.
  2. Remove from heat and set aside to cool.
  3. Beat eggs with sugar until a heavy ribbon forms when you lift the beaters.
  4. Lighten the chocolate mixture with a small amount of the egg mixture, and then fold the chocolate into the egg mixture, blending well.
  5. Fold in the potato starch.
  6. Pour into a buttered and floured 8-inch cake pan.
  7. Bake in a 350 degree oven for about 30 minutes.
  8. Cool in the pan before turning out onto a serving plate.
