Tortilla-Black Bean Casserole
(Serves 6-8)
Ingredients:
2 cups Chopped Onion 1 1/2 cups Chopped Green Onions 1 (14.5 oz.) can Tomatoes 3/4 cup Picante Sauce 2 cloves Garlic 2 teaspoons Cumin 2 cans Black Beans, drained
12 corn Tortillas 2 cups Monterey Jack Cheese
Directions:
Simmer approximately 10 minutes in a frying pan onion, green onion, tomatoes, picante sauce, garlic and cumin.
Stir in black beans.
In a Dutch Oven, layer 1/3 mixture, 1/3 tortillas, 1/3 cheese -- repeat 3 times for 3 sections of 3 layers each
Bake approximately 35 minutes.
Save some cheese to sprinkle on top after baking.
