Triple Meat Barbecue


(Serves 12)

Ingredients:

12 country-style Pork Ribs
12 country-style Beef Ribs
4 18-oz. bottles Barbecue Sauce
12 skinless Chicken Breasts

Directions:

  1. Preheat Dutch Oven over 16 briquettes and slightly oil cooking surface.
  2. Starting with beef, cook each rib until brown.
  3. Next, brown pork ribs; drain as needed.
  4. Return ribs to oven.
  5. Cover with barbecue sauce.
  6. Reduce briquettes to 12 and simmer for 2 hours (briquettes will have to be replenished every 1 hour). Stir often to prevent bottom and sides from scorching.
  7. Add 12 chicken breasts and continue cooking 1 hour or until all three meats are tender. (Broth from cooking thins the sauce. If a slightly thicker sauce is desired, cook with lid slightly cracked open.)

Hint:

If preferred, one cut of meat or any combination can be used. Using all three meats gives this dish a delightful, but robust flavor.

Time saving measure: start cooking chicken in a second oven 1 hour into ribs simmering time.
